The Ischian rural tradition is, by historical necessity, the emblem of zero-waste cooking: nothing was thrown away, because the land demanded hard work and offered precious resources in return.
Participants will not only eat, but also understand how what was once necessity—wasting nothing—is today a fundamental choice for protecting fragile territories such as Ischia. Ischian peasant cuisine is not just “reuse”: it is above all an explosion of flavor, rich fats, golden frying, and overwhelming aromas.
Tasting participation requires booking.
